Ingredients
  

  • 1 whole Rotisserie chicken, shredded skin removed
  • 2 cups Frozen mixed vegetables
  • 2 cups Minute Rice uncooked
  • 1 can Cream of chicken soup
  • 1 cup Milk 2% or whole
  • 1 tsp Minced garlic
  • 1 tsp Onion powder
  • 1 tsp Italian seasoning
  • to taste Salt
  • to taste Ground pepper
  • 1.5 cups Colby Jack cheese, shredded

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine shredded chicken, frozen veggies, and uncooked Minute Rice.
  3. Pour in cream of chicken soup and milk, then add garlic, onion powder, Italian seasoning, salt, and pepper; stir until well mixed.
  4. Transfer the mixture into the greased baking dish, spreading it evenly and cover tightly with aluminum foil.
  5. Bake for 25 minutes, then remove the foil, sprinkle cheese evenly on top, and bake uncovered for 10-15 more minutes until the cheese is melted and golden.
  6. Let the casserole rest for 5 minutes before serving.
