Ingredients
  

  • 8 oz uncooked rigatoni
  • 1 tbsp olive oil
  • 1 cup chopped onion
  • 1 10 oz package frozen spinach, thawed
  • 3 cups cubed, cooked chicken breasts
  • 1 14 oz can Italian-style diced tomatoes, undrained
  • 1 8 oz container chive & onion cream cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cups shredded mozzarella cheese

Method
 

  1. Prepare the rigatoni according to the package directions; drain and set aside.
  2. Spread olive oil in an 11x7 inch baking dish, add the chopped onion, and bake at 375°F for about 15 minutes until tender and golden.
  3. Drain the thawed spinach well, pressing it to remove excess water.
  4. In a large bowl, combine cooked rigatoni, drained spinach, chicken, diced tomatoes, cream cheese, salt, and pepper, stirring well.
  5. Spoon the mixture into the baking dish and sprinkle with shredded mozzarella cheese.
