Ingredients
  

  • 12 ounces linguine pasta
  • 4 tablespoons unsalted butter
  • 6-8 large garlic cloves finely minced
  • 1 cup heavy cream
  • 1 ½ cups freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional, for a kick
  • to taste fresh parsley chopped, for garnish

Method
 

  1. Fill a large pot with water and bring it to a rolling boil. Add salt and cook the linguine according to package directions until 'al dente'.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat and add the minced garlic. Cook for 1-2 minutes until fragrant, watching closely to prevent burning.
  3. Pour the heavy cream into the skillet with the garlic butter and gently warm it for 2-3 minutes, avoiding vigorous boiling.
  4. Reduce the heat to low, add the grated Parmesan and shredded mozzarella, and stir until the cheese melts and thickens the sauce.
  5. Add the drained linguine directly into the cheesy sauce, toss to coat evenly, and season with salt and pepper to taste. Let it sit for one minute off the heat before serving.
  6. Plate it up, garnish with fresh parsley and an extra sprinkle of Parmesan, and serve immediately.
