  • 4 cloves Garlic minced
  • 2 tsp Cajun seasoning
  • 1 tsp Smoked paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 lb Bowtie pasta (farfalle)
  • 6 tbsp Butter
  • 4 cloves Garlic minced
  • 3 cups Heavy cream
  • 1 cup Grated Parmesan cheese
  • 1/2 cup Shredded Mozzarella cheese
  • 1/4 tsp Salt
  • 1/8 tsp White pepper

Equipment

  • Large skillet
  • Large pot
  • Tongs
  • Wooden spoon or whisk

Method

  1. Pat the sirloin steak dry with paper towels and season with Cajun seasoning, smoked paprika, salt, and black pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat and sear the steak for 3-4 minutes until browned.
  3. Flip the steak and cook for another 3-4 minutes for medium-rare, adding minced garlic and remaining butter in the last minute to baste the steak.
  4. Remove the steak to rest on a cutting board.
  5. Cook the bowtie pasta in salted water until al dente, then drain and reserve about a cup of pasta water.
  6. In the same pot, melt 6 tablespoons of butter and cook minced garlic for 30 seconds.
  7. Add heavy cream and bring to a gentle simmer, then stir in Parmesan and mozzarella until melted.
  8. Toss the drained pasta with the Alfredo sauce, adding reserved pasta water if needed, and serve with sliced steak on top.
