  • 6 units hard-boiled eggs
  • 4 slices chicken ham or use regular ham or turkey
  • 50 g butter
  • 50 g flour
  • 500 ml milk preferably warm
  • 100 g grated cheese (Gruyère or Comté) for flavor
  • q.s. salt and pepper to taste
  • a pinch nutmeg (optional)

Method
 

  1. Start by melting the butter in a medium-sized saucepan over medium heat.
  2. Once melted, sprinkle in the flour and whisk continuously to avoid lumps.
  3. Slowly pour in the milk while stirring, whisking until the sauce thickens (about 5 minutes).
  4. Add the grated cheese, and season with salt, pepper, and nutmeg if desired.
  5. Cut the hard-boiled eggs in half lengthwise and wrap each half snugly in a slice of chicken ham.
  6. Arrange the wrapped eggs in a baking dish, cut side up.
  7. Pour the béchamel sauce generously over the egg bundles.
  8. Bake in a preheated oven at 180°C (350°F) for 15–20 minutes, until golden and bubbly.
