Ingredients
  

  • 4 pieces boneless pork chops about 1 inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 cup carrots thinly sliced
  • 1 cup asparagus trimmed and cut into 1-inch pieces
  • 1 cup sugar snap peas trimmed
  • 1 small yellow onion diced
  • 1 cup chicken broth
  • 1 cup shredded cheese mozzarella or a blend

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Season the pork chops with olive oil and the mixed spices of garlic powder, thyme, paprika, salt, and pepper on both sides.
  3. Sear the pork chops in a hot skillet for about 2 minutes per side until golden brown.
  4. Place the seared pork chops in the prepared baking dish and scatter the chopped vegetables around them.
  5. Pour the chicken broth over the dish and sprinkle shredded cheese on top.
  6. Cover the dish tightly with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes until cheese is bubbly and pork reaches an internal temperature of 145°F (63°C).
  8. Allow the casserole to rest for 5 minutes before serving and garnish with fresh parsley if desired.
