- Preheat your oven to 200 degrees Celsius.
- Peel the potatoes and slice them into thin, even rounds.
- In a pan, heat the olive oil over medium heat and sauté the finely chopped onion until golden brown.
- Add the potato slices to the pan and cook for about 10 minutes, or until they start to soften.
- In a bowl, whisk together the eggs and crème fraîche, seasoning with salt, pepper, and herbes de Provence if using.
- Lay the pâte brisée in a tart dish and prick the bottom with a fork.
