  • 1 pâte brisée pie crust
  • 3 large potatoes
  • 200 g Camembert cheese
  • 200 ml crème fraîche or heavy cream
  • 1 tbsp olive oil
  • to taste Salt and pepper
  • optional Herbes de Provence

Method
 

  1. Preheat your oven to 200 degrees Celsius.
  2. Peel the potatoes and slice them into thin, even rounds.
  3. In a pan, heat the olive oil over medium heat and sauté the finely chopped onion until golden brown.
  4. Add the potato slices to the pan and cook for about 10 minutes, or until they start to soften.
  5. In a bowl, whisk together the eggs and crème fraîche, seasoning with salt, pepper, and herbes de Provence if using.
  6. Lay the pâte brisée in a tart dish and prick the bottom with a fork.
  7. Spread the cooked potato and onion mixture evenly over the base.
  8. Slice the Camembert and arrange it on top of the potatoes.
  9. Pour the egg and crème fraîche mixture over the top to cover all the ingredients.
  10. Optional: Sprinkle grated Parmesan cheese over the top before baking.
  11. Optional: Brush the edges of the pie crust with a beaten egg for a golden finish.
  12. Bake in the preheated oven for about 35 minutes, or until the crust is golden brown and the filling is set.
  13. Allow the tart to rest for a few minutes before slicing and serving.
