Chicken Mushroom Vol-au-Vent

Ingredients
  

  • 300 g chicken breast
  • 150 g white button mushrooms
  • 1 onion
  • 20 cl heavy cream
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • to taste Salt and pepper
  • for garnish Fresh parsley

Equipment

  • Large skillet or frying pan
  • Cutting board and sharp knife
  • Rolling pin (if needed)
  • Round cookie cutters or glasses (two sizes)
  • Baking sheet
  • Parchment paper or silicone baking mat
  • Wooden spoon or spatula
  • Measuring cups and spoons

Method
 

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, melt the butter over medium heat and sauté the finely chopped onion until soft and translucent.
  3. Add diced chicken breast to the skillet and cook until no longer pink.
  4. Stir in sliced mushrooms and cook until tender and golden.
  5. Sprinkle flour over the mixture, stir well, and cook for about two minutes.
  6. Pour in chicken broth and heavy cream, stirring constantly; simmer until thickened.
  7. Roll out puff pastry sheets and cut out large circles, creating rings with smaller circles for lids.
  8. Chill pastry for 10 minutes then bake for 15 to 20 minutes until golden.
  9. Assemble by spooning the filling into the pastry cases and sprinkle with fresh parsley.
