  • 3 Tbsp fresh lemon juice from 1 large lemon
  • 1 clove garlic pressed or minced
  • 1 tsp sea salt or to taste
  • 1 tsp black pepper
  • 1 cup cherry tomatoes halved
  • 15 oz canned chickpeas (garbanzo beans), drained and rinsed
  • 1 medium red onion thinly sliced
  • 1/2 cup fresh cilantro chopped
  • 4 oz feta cheese diced

Method
 

  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper until well combined.
