Ingredients

  • 4 cup Cooked rice
  • 2 cup Diced chicken
  • 1 cup Peas
  • 1 cup Carrots
  • 2 scallions Green onions
  • 3 tablespoon Soy sauce
  • 2 clove Garlic
  • 2 tablespoon Sesame oil
  • 1 large Egg
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Equipment

  • Large wok or skillet
  • Spatula
  • Knife and cutting board
  • Bowls for prep
  • Cooking spoon

Method

  1. Start by heating sesame oil in a large wok or skillet. Add diced chicken and stir-fry until golden brown and cooked through. The sizzle of the chicken hitting the hot oil will fill your kitchen with amazing smells. Pro tip: Cut the chicken into uniform pieces for even cooking.
  2. Toss in minced garlic, peas, and carrots next. Stir often until the veggies soften slightly. Their bright colors make the dish visually appealing. Keep the heat medium-high to avoid mushy vegetables.
  3. Push the mixture to one side of the pan. Crack an egg into the empty space and scramble it quickly. Once set, mix everything together. The egg coats the rice and adds richness to every bite.
  4. Add cooked rice, soy sauce, salt, and pepper. Stir well and cook for 3-4 more minutes. The grains should absorb the flavors while staying separate. Adjust seasoning to taste. Your kitchen will smell incredible!
