Method
- Preheat your oven to 350°F (175°C) and spray a 9x13 inch baking dish with cooking spray.
- Whisk together the eggs and milk in a large bowl until light and frothy.
- Cook the bacon in a large skillet over medium heat until crispy, then transfer to a plate lined with paper towels.
- Reserve 1 tablespoon of bacon fat in the pan and pour in the egg mixture, cooking on medium-low heat while stirring occasionally.
- When eggs are mostly cooked but still slightly wet, season with salt, pepper, and stir in the chives.
- Spread cream cheese on the cut sides of each bottom bagel half and place them in the greased baking dish.
- Spoon the egg mixture over the bagels, crumbling the bacon on top, then sprinkle shredded Cheddar cheese over everything.
- Mix melted butter with dried onion and garlic, then brush it over the bagel tops and sprinkle with sesame and poppy seeds.
- Bake the sliders for about 10 minutes, until the bagels are toasty and the cheese is melted.
- Let them sit for 2-3 minutes before serving warm.

Notes
You can use turkey bacon or vegetarian alternatives if desired. Feel free to customize with different types of cheese or bagels. These sliders store well in an airtight container in the fridge for up to 3 days and can be reheated in the oven or microwave. For a twist, add some hot sauce to the melted butter for a spicy kick!
