Ingredients
  

  • 200 g cornstarch (maicena)
  • 100 g all-purpose wheat flour
  • 100 g softened butter
  • 1 large egg
  • 200 g sweetened condensed milk
  • ½ cup Dulce de leche to taste

Method
 

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the cornstarch and all-purpose flour.
  3. Add the softened butter to the dry ingredients and combine until it resembles coarse crumbs.
  4. Make a well in the mixture, crack in the egg, and pour in the sweetened condensed milk; mix until a soft dough forms.
  5. Roll the dough into small balls (about walnut size) and place them on the prepared baking sheet, spacing them apart.
  6. Bake for 15 to 20 minutes until the bottoms are very lightly golden and the tops remain pale.
  7. Allow cookies to cool completely on a wire rack before filling with dulce de leche to create sandwich cookies.
