Ingredients
  

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, baking powder, and salt; set aside.
  3. In a mixer's bowl, cream together butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla (and almond extract, if using).
  5. Gradually add the flour mixture to the butter mixture until well combined.
  6. Chill the dough for at least 2 hours in the refrigerator.
  7. Roll out the chilled dough between two sheets of parchment paper to your desired thickness.
  8. Cut out shapes using cookie cutters and place them on a baking sheet.
  9. Chill the cut-out cookies on the baking sheet for another 10 minutes.
  10. Bake for 8-10 minutes until edges are barely set but centers look pale.
  11. Allow cookies to cool on the baking sheet for 2 minutes before transferring to a wire rack.
