Ingredients
  

  • 16 oz. bow tie pasta cooked and cooled
  • 1 cup corn kernels about 2 ears of corn
  • 1 cup cherry tomatoes halved
  • 1 small red onion chopped or thinly sliced
  • 2 Tbsp cilantro finely chopped
  • 1-2 whole avocados diced
  • q.s. Cotija cheese crumbled (optional)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh lime juice
  • 1/4 cup cilantro roughly chopped (leaves & stems are okay)
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper

Method
 

  1. Add Greek yogurt, lime juice, cilantro, garlic, salt, and cayenne pepper to a food processor. Blend until smooth and creamy, then refrigerate.
  2. In a large bowl, combine cooled pasta, corn, cherry tomatoes, and red onion. Stir in chopped cilantro, pour dressing over, and toss gently.
  3. Top each serving with diced avocado and crumbled Cotija cheese if using, then serve immediately.
  4. For an extra burst of flavor, add a pinch of smoked paprika to the dressing.

Notes

For a fresher texture, prepare the vegetables and dressing ahead but wait to mix with the pasta until just before serving. If the dressing is too thick, add a splash of water to thin it out. If too thin, add more yogurt. To prevent avocado from browning, add it just before serving. Store leftovers in an airtight container for up to 3 days. The pasta absorbs dressing, so add more before serving leftovers.
