Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast
  • 1/2 cup whole milk
  • 1/3 cup unsalted butter (melted)
  • 1 large egg
  • 1 tsp salt
  • 1/2 cup unsalted butter (softened, for filling)
  • 1 cup packed brown sugar (for filling)
  • 2 tbsp ground cinnamon (for filling)
  • 1 cup powdered sugar (for icing)
  • 1/4 cup cream cheese (for icing)
  • 1/4 tsp vanilla extract (for icing)
  • 2-3 tbsp milk (for icing)

Equipment

  • Rolling pin
  • Sharp knife or dental floss for slicing rolls
  • Mixing bowls
  • Baking pan
  • Kitchen towel for covering rolls while they rise

Method

  1. Mix the yeast with warm milk and a pinch of sugar in a bowl and let it sit for about 5 minutes until frothy.
  2. In a separate bowl, whisk together the flour, sugar, and salt.
  3. Add the melted butter and beaten egg to the yeast mixture, then gradually combine everything into a soft dough.
  4. Knead the dough on a floured surface until smooth and elastic.
  5. Spread the softened butter evenly over the rolled-out dough.
  6. Mix brown sugar and cinnamon, then sprinkle it generously over the butter.
  7. Roll the dough tightly into a log and seal the edges.
  8. Use a sharp knife to cut the log into equal slices, about 1.5 inches thick.
  9. Place the rolls in a greased baking pan, leaving space between each one, and cover with a kitchen towel.
  10. Let the rolls rise for about an hour until doubled in size.
  11. Preheat the oven to 375°F (190°C) and bake the rolls for 18-20 minutes until golden brown.
  12. While they bake, mix powdered sugar, cream cheese, vanilla, and milk until smooth for icing.
  13. Drizzle the icing generously over the baked rolls once they come out of the oven.

Notes

Always measure your flour accurately—a kitchen scale is recommended. For extra soft rolls, brush with melted butter right after baking. You can make the dough ahead of time and refrigerate overnight; let it come to room temperature before baking. To keep rolls gooey, store with a piece of bread in the container. Reheat in the microwave for 10-15 seconds for best results.
