  • 1/2 teaspoon baking soda

  • 2 tablespoons cane sugar
  • 1/4 cup unsweetened applesauce (egg substitute)
  • 1/2 cup buttermilk
  • 3 tablespoons canola oil or liquid coconut oil/butter
  • 1/4 cup cream soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon butter extract
  • 1/8 teaspoon caramel extract
  • 1 teaspoon butterscotch syrup

Method
 

  1. In a large mixing bowl, whisk together flour, baking soda, baking powder, salt, and sugar.
  2. Create a well in the center and add applesauce, buttermilk, oil, cream soda, and extracts.
  3. Gently stir until just combined with a few small lumps.
  4. Heat a griddle or non-stick skillet over low to medium heat, and grease lightly.
  5. Spoon batter onto the hot surface, shaping gently into circles.
  6. Cook until bubbles form on top and edges are set, then flip and cook until golden brown.
  7. Serve immediately with whipped cream, maple syrup, and butterscotch syrup.
