  • 1 cup whole wheat flour
  • 1 cup bran flakes
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup raisins

Method
 

  1. Start by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, bran flakes, baking powder, baking soda, salt, and brown sugar. Stir gently to mix.
  3. In another bowl, whisk together milk, vegetable oil, eggs, and vanilla extract. The wet mixture should be smooth and creamy.
  4. Pour the wet ingredients into the dry mix. Stir gently until just combined. Don’t overmix; fold in the raisins last.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Bake for 18-20 minutes.
  6. Let muffins cool before serving.
