Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 peeled and sliced carrots
  • 2 chopped celery stalks
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 boneless, skinless chicken breasts
  • 2 cups egg noodles
  • 2 bay leaves
  • to taste Salt and pepper
  • q.s. Fresh parsley, chopped (for garnish)

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, carrots, and celery, stirring occasionally until they soften and turn slightly golden.
  3. Toss in the garlic and cook for another minute, being careful not to burn it.
  4. Pour in the chicken broth and add the bay leaves; bring to a gentle boil.
  5. Lower the heat to a simmer and add the chicken breasts, letting them poach for about 15 minutes.
  6. Remove the cooked chicken, shred it, and return the meat to the pot.
  7. Stir in the egg noodles and simmer until they are al dente.
  8. Season with salt and pepper to taste.
  9. Ladle the soup into bowls and sprinkle fresh parsley on top before serving.
