- In a large pot, combine the chicken breasts, half of the chopped onion, one minced garlic clove, one bay leaf, and enough water to cover. Bring to a boil, then reduce heat and simmer until the chicken is fully cooked, about 25 minutes. Remove the chicken, let it cool slightly, then shred the meat and set aside.
- In the same pot, add the remaining chopped onion, minced garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
- Return the shredded chicken to the pot. Add the chicken broth, remaining bay leaf, and dried thyme. Bring to a boil, then reduce heat and let it simmer for about 20 minutes.
- Add the egg noodles to the pot and cook for about 10 minutes or until the noodles are tender. Stir occasionally to prevent sticking.
- Season with salt and pepper to taste, remove the bay leaves, and garnish with chopped parsley before serving.
