Ingredients
  

  • 2 large chicken breasts, bone-in for more flavor
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 2 bay leaves
  • 1 tsp dried thyme
  • to taste salt and pepper
  • for garnish chopped parsley

Method
 

  1. In a large pot, combine the chicken breasts, half of the chopped onion, one minced garlic clove, one bay leaf, and enough water to cover. Bring to a boil, then reduce heat and simmer until the chicken is fully cooked, about 25 minutes. Remove the chicken, let it cool slightly, then shred the meat and set aside.
  2. In the same pot, add the remaining chopped onion, minced garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
  3. Return the shredded chicken to the pot. Add the chicken broth, remaining bay leaf, and dried thyme. Bring to a boil, then reduce heat and let it simmer for about 20 minutes.
  4. Add the egg noodles to the pot and cook for about 10 minutes or until the noodles are tender. Stir occasionally to prevent sticking.
  5. Season with salt and pepper to taste, remove the bay leaves, and garnish with chopped parsley before serving.
