Ingredients
  

  • 400 g cod fillet cut into chunks
  • 200 g peeled shrimp
  • 2 carrots sliced into rounds
  • 1 leek thinly sliced
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • 20 cl liquid cream
  • 1 egg yolk
  • 1 tablespoon flour
  • 20 cl vegetable broth or fish stock
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 bouquet garni (bay leaf, thyme, parsley)
  • q.s. salt to taste
  • q.s. pepper to taste
  • 1/2 unit lemon juice of half

Method
 

  1. Heat olive oil and butter in a large pot over medium heat and add onion, garlic, carrots, and leek; cook for about 5 minutes until softened.
  2. Sprinkle the flour over the vegetables and stir well; cook for another minute.
  3. Pour in the vegetable broth or fish stock and add the bouquet garni; bring to a boil and then reduce heat to simmer for 10 minutes.
  4. Place the cod pieces into the pot and cook for 5 minutes until flaky.
  5. Stir in the shrimp and simmer for another 3 minutes until pink and curled.
  6. Whisk together the egg yolk, cream, and lemon juice in a small bowl; remove the pot from heat and slowly pour in this mixture while stirring gently.
  7. Adjust seasoning with salt and pepper, remove bouquet garni, and serve with rice or potatoes.
