Ingredients
  

  • 400 g cod fillet, cut into chunks
  • 200 g peeled shrimp
  • 2 carrots, sliced into rounds
  • 1 leek, thinly sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 20 cl liquid cream
  • 1 yolk egg yolk
  • 1 tablespoon flour
  • 20 cl vegetable broth or fish stock
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 bouquet garni (bay leaf, thyme, parsley)
  • to taste Salt and pepper
  • juice of half lemon lemon juice

Method
 

  1. Heat the olive oil and butter in a large pot over medium heat. Add the onions, garlic, carrots, and leeks, and sauté for about 5 minutes until they soften slightly.
  2. Sprinkle the flour over the softened vegetables and stir well to coat everything evenly, cooking for another minute.
  3. Pour in the vegetable broth or fish stock, then toss in the bouquet garni. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Gently place the cod pieces into the pot and cook for 5 minutes until flaky.
  5. Add the peeled shrimp and simmer for another 3 minutes until they turn pink.
  6. In a small bowl, whisk together the egg yolk, cream, and lemon juice. Remove the pot from heat and slowly stir in this mixture.
  7. Taste and adjust the seasoning with salt, pepper, and an extra squeeze of lemon. Remove the bouquet garni and serve.
