- Heat the olive oil and butter in a large pot over medium heat. Add the onions, garlic, carrots, and leeks, and sauté for about 5 minutes until they soften slightly.
- Sprinkle the flour over the softened vegetables and stir well to coat everything evenly, cooking for another minute.
- Pour in the vegetable broth or fish stock, then toss in the bouquet garni. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Gently place the cod pieces into the pot and cook for 5 minutes until flaky.
- Add the peeled shrimp and simmer for another 3 minutes until they turn pink.
- In a small bowl, whisk together the egg yolk, cream, and lemon juice. Remove the pot from heat and slowly stir in this mixture.
- Taste and adjust the seasoning with salt, pepper, and an extra squeeze of lemon. Remove the bouquet garni and serve.
