Ingredients
  

  • 10 lbs potatoes peeled and chopped
  • 2 sweet yellow onions onions peeled and sliced
  • q.s. water enough to cover the potatoes and onions plus 2 inches extra
  • 1 stick real butter
  • 1 cup heavy whipping cream
  • to taste salt
  • to taste pepper
  • optional toppings green onions, bacon, shredded cheese, hard-boiled eggs

Equipment

  • 12-quart stew pot
  • Peeler
  • Knife and cutting board
  • Slotted spoon
  • Masher

Method
 

  1. Peel and chop the potatoes into 2-inch pieces.
  2. Peel and slice the onions into rings and add to the pot with the potatoes.
  3. Place potatoes and onions in a 12-quart stew pot, cover with water, and bring to a boil. Simmer until tender.
  4. Add butter and cream to the pot, stirring gently to combine. Season with salt and pepper.
  5. For a thicker soup, remove some potatoes to mash and stir back into the pot until desired thickness is achieved.
  6. Prepare toppings and serve on the side for customization.
