  • 2 medium potatoes scrubbed and diced into 1-inch pieces
  • 1 small zucchini sliced into half-moons
  • 1 small red onion cut into wedges
  • 1 red bell pepper sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste freshly ground black pepper
  • to garnish fresh parsley chopped

Method
 

  1. Preheat your oven to 400°F (200°C) and prepare four large pieces of heavy-duty aluminum foil.
  2. In a big bowl, combine cubed steak, potatoes, zucchini, onion, and bell pepper, then drizzle with olive oil.
  3. Add minced garlic, smoked paprika, thyme, and season with salt and pepper, then toss everything well.
  4. Divide the steak and veggie mixture evenly among the four pieces of foil and pack them tightly.
  5. Bake in the preheated oven for 25-30 minutes, then carefully open the packets to serve.
