- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the butternut squash, Brussels sprouts, and sweet potatoes with olive oil, salt, pepper, and cinnamon if using.
- Spread the vegetables evenly on the baking sheet and roast for 25-30 minutes, flipping halfway through.
- While the vegetables are roasting, prepare the cranberry glaze by whisking together cranberry sauce, balsamic vinegar, and maple syrup in a small saucepan over medium heat. Simmer for 3-5 minutes until thickened.
- Transfer the roasted vegetables to a serving platter or bowl, drizzle the cranberry glaze over, and sprinkle with dried cranberries, goat cheese, and nuts if using. Serve warm or at room temperature, with mixed greens if desired.
