Ingredients
  

  • 4 pieces boneless, skinless chicken breasts

  • 4 ounces cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1 cup crushed Doritos chips
  • 2 eggs beaten
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 375°F (190°C) and coat a baking dish with olive oil.
  2. Butterfly the chicken breasts by slicing horizontally through the thickest part, creating a pocket.
  3. Season the inside pockets of the chicken with salt and pepper.
  4. In a mixing bowl, combine cream cheese, shredded cheddar, and crumbled bacon.
  5. Stuff the mixed filling into each chicken breast pocket and press the edges to seal. Secure with toothpicks if necessary.
  6. Dip each stuffed chicken breast into the beaten eggs then coat fully in crushed Doritos.
  7. Bake the chicken in the oven for 25-30 minutes until cooked through and golden brown.
