Ingredients
  

  • 1 lb diced chicken breasts
  • 4 slices chopped bacon
  • 1 small finely chopped onion
  • 3 cloves minced garlic
  • 1 lb store-bought or homemade gnocchi
  • 1 cup sliced baby carrots
  • 2 cups baby spinach
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • to taste salt and pepper
  • 1 teaspoon dried Italian herbs

Method
 

  1. Cook the bacon in a skillet over medium heat until crispy, then remove and set aside, leaving the bacon fat in the pan.
  2. Sauté the diced chicken in the bacon fat until golden brown; season with salt, pepper, and Italian herbs, then remove and set aside.
  3. Add the chopped onion to the skillet and cook until translucent, then add minced garlic and cook for an additional 30 seconds.
  4. Stir in the flour to create a roux, then whisk in chicken broth and heavy cream; bring to a simmer until thickened.
  5. Combine the cooked gnocchi, bacon, chicken, baby carrots, and spinach into the skillet, stirring gently to combine.
  6. Stir in the grated Parmesan cheese until melted; taste and adjust seasoning before serving.
