Ingredients
  

  • 1 lb sirloin steak, cut into juicy bite-sized pieces
  • 12 oz linguine pasta
  • 2 tbsp olive oil
  • 3 tbsp butter (for beef)
  • 4 tbsp butter (for sauce)
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 4 oz cream cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • q.s. Salt & cracked black pepper to taste
  • 1/2 cup reserved pasta water (if needed to loosen sauce)
  • q.s. Fresh chopped parsley for garnish

Equipment

  • Large pot for boiling pasta
  • Large skillet for searing beef and making the sauce
  • Measuring cups and spoons
  • Whisk
  • Colander for draining pasta

Method
 

  1. Cook the linguine in salted water until al dente, then drain and reserve 1/2 cup pasta water.
  2. Season beef with salt and pepper, then heat olive oil and 3 tbsp butter in a skillet over medium-high heat. Sear beef for 3-4 minutes per side, then set aside.
  3. In the same skillet, melt 4 tbsp butter, add garlic, and sauté until fragrant. Stir in heavy cream and milk, warming it through.
  4. Add cream cheese and whisk until fully melted and smooth.
  5. Stir in mozzarella, Parmesan, garlic powder, onion powder, and season with salt and pepper. Adjust thickness with reserved pasta water if necessary.
  6. Toss cooked linguine into the sauce, fold in seared beef, and warm through for 1-2 minutes.
  7. Garnish with parsley and extra Parmesan. Serve immediately.
