- Cook the linguine in salted water until al dente, then drain and reserve 1/2 cup pasta water.
- Season beef with salt and pepper, then heat olive oil and 3 tbsp butter in a skillet over medium-high heat. Sear beef for 3-4 minutes per side, then set aside.
- In the same skillet, melt 4 tbsp butter, add garlic, and sauté until fragrant. Stir in heavy cream and milk, warming it through.
- Add cream cheese and whisk until fully melted and smooth.
- Stir in mozzarella, Parmesan, garlic powder, onion powder, and season with salt and pepper. Adjust thickness with reserved pasta water if necessary.
- Toss cooked linguine into the sauce, fold in seared beef, and warm through for 1-2 minutes.
- Garnish with parsley and extra Parmesan. Serve immediately.
