  • 10 slices white sandwich bread
  • 3 tablespoons butter melted
  • 3 tablespoons brown sugar
  • 2 tablespoons ground cinnamon
  • 3 large eggs
  • 1 tablespoon milk
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 2-3 tablespoons butter for frying

Method
 

  1. Trim the crusts off the bread slices and flatten each slice with a rolling pin.
  2. In a small bowl, mix the melted butter, brown sugar, and cinnamon until it forms a paste.
  3. Spread the cinnamon paste evenly over each bread slice, leaving a small border.
  4. Roll each slice tightly from one end to the other and press the seam to seal.
  5. In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract until smooth.
  6. Heat a non-stick skillet over medium heat and add butter.
  7. Dip each roll-up quickly in the egg mixture and place seam-side down in the skillet.
  8. Cook for 2-3 minutes per side until golden brown, adding more butter as needed.
  9. Transfer to a plate, dust with powdered sugar, and serve with maple syrup.
