- Bring a large pot of salted water to a boil. Add the rigatoni and cook until al dente, about 11-13 minutes. Drain and set aside.

- Pour in beef broth and heavy cream, stirring to combine. Let the mixture simmer gently, then reduce heat. Stir in Parmesan and mozzarella until melted and the sauce is smooth.
- Return cooked beef to the skillet, add drained rigatoni, and toss until coated in the creamy sauce.
- Top with chopped parsley and additional Parmesan if desired. Serve hot.
