Ingredients
  

  • 12 oz linguine pasta
  • 1 lb chicken cut into pieces
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1 cup chicken broth
  • 2 cups heavy cream
  • 4 oz cream cheese cubed
  • 2 tsp Cajun seasoning
  • 1 tsp Italian seasoning
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded Velveeta cheese
  • q.s. Salt and freshly ground black pepper to taste
  • q.s. Chopped parsley optional

  • Large skillet

Method
 

  1. Cook the linguine according to package directions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium-high heat.
  3. Add chicken pieces and cook until golden brown and cooked through, then remove and set aside.
  4. Add diced onion to the skillet and cook until softened and translucent.
  5. Stir in minced garlic and cook for about 30 seconds.
  6. Sprinkle Cajun and Italian seasonings into the skillet, stirring well to coat.
  7. Sprinkle flour over the mixture and stir to coat evenly.
  8. Pour in chicken broth and heavy cream, stirring continuously and simmer until thickened.
  9. Add cream cheese, Parmesan, and Velveeta to the skillet, stirring until melted and smooth.
  10. Return cooked chicken to the skillet and stir to coat in sauce.
  11. Add linguine to the skillet and toss until coated in the creamy sauce.
  12. Simmer for about 12 minutes to let flavors meld.
  13. Serve hot, garnished with chopped parsley if desired.
