- In a bowl, toss the chicken pieces with olive oil, Cajun seasoning, and smoked paprika until well coated.
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente, about 10-12 minutes. Drain and set aside.
- While the pasta is cooking, heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, or until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Stir in the minced garlic and cook for 1 minute until fragrant.
- Sprinkle in the flour and whisk constantly for 1 minute to form a roux.
- Slowly whisk in the milk and chicken broth until smooth. Bring to a gentle simmer, stirring occasionally until slightly thickened.
- Reduce the heat to low and stir in the cream cheese. Mix until fully melted and smooth.
- Add 1 1/2 cups of mozzarella cheese and all the Parmesan. Stir until melted and the sauce is creamy. Season with salt, pepper, and red pepper flakes if using.
- Add the cooked fettuccine and chicken to the skillet. Gently toss to coat the pasta evenly in the sauce.
- Transfer to an oven-safe serving dish or skillet. Sprinkle the remaining 1/2 cup of mozzarella on top. Broil for 2-3 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy every creamy, cheesy, Cajun bite.
