- Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of pasta water and drain the rest.
- Heat a large skillet over medium heat, add the diced pancetta or bacon, and cook until crispy. Add the minced garlic and cook for another minute without burning it.
- In a mixing bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt. Slowly add some reserved hot pasta water to temper the eggs.
- Return the drained pasta to the skillet with the pancetta/bacon and garlic. Toss to combine. Pour the egg and cheese mixture over the hot pasta and quickly toss to create a creamy sauce. Add more reserved pasta water if needed.
