  • 12 oz spaghetti
  • 1 lb boneless, skinless chicken breasts, cut into thick strips
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp paprika
  • to taste Salt and pepper
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 3 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 oz cream cheese, cubed
  • 1 tsp Italian seasoning
  • to taste Fresh parsley, chopped for garnish

Method
 

  1. Start by bringing a large pot of salted water to a boil. Add the spaghetti and cook until it's al dente; drain and set aside.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken strips and season with Cajun seasoning, paprika, salt, and pepper. Cook for 7-8 minutes until golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, melt the remaining 2 tablespoons of butter and add the minced garlic. Sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and heavy cream, stir to deglaze the pan, and simmer for 2-3 minutes.
  5. Lower the heat and add Velveeta, mozzarella, Parmesan, and cream cheese. Stir continuously until the cheeses melt into a creamy sauce.
  6. Add Italian seasoning, salt, and pepper, then toss in the spaghetti and chicken until well coated.
  7. Serve warm, garnished with fresh parsley and an extra sprinkle of Parmesan.
