- Preheat your oven to 425°F (220°C).
- Toss potato chunks with olive oil, salt, and pepper; spread evenly in a large baking dish.
- Roast potatoes for 20–25 minutes, stirring halfway through.
- In a medium saucepan, melt butter with olive oil over medium heat; add shallots and garlic until soft.
- Add cream, chicken broth, rosemary, mustard, capers, lemon zest, lemon juice, and cayenne; simmer for 5–7 minutes and season to taste.
- Arrange cod fillets on top of the potatoes in the baking dish; spoon sauce over them.
- Bake for another 12–15 minutes until cod flakes easily and is opaque.
- Garnish with fresh parsley and serve with lemon wedges.
