  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • q.s. Salt and black pepper, to taste
  • 12 ounces linguine pasta
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups whole milk or half-and-half
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • q.s. red pepper flakes, to taste (optional)
  • q.s. chopped fresh parsley or basil, for garnish (optional)

Method
 

  1. Fill a large pot with water, add salt, and bring to a boil. Cook the linguine until al dente, about 10-12 minutes, then drain.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with Italian seasoning, garlic powder, salt, and pepper. Sear in batches until golden and cooked through, then set aside.
  3. In the same skillet, melt butter, then stir in minced garlic. Sprinkle flour, whisk until bubbly, and gradually add milk, stirring until thickened. Incorporate both cheeses.
  4. Return chicken and pasta to the skillet, tossing to coat in the sauce. Top with remaining mozzarella and cover briefly to melt.
