- Heat olive oil in a large pan over medium heat.
- Add the sausage and break it up as it cooks, cooking for about 5-7 minutes until browned.
- Stir in the garlic and onion, cooking for 1-2 minutes until soft and fragrant.
- Mix in the sun-dried tomatoes, roasted red peppers, and red pepper flakes (if using) for an additional 2 minutes.
- Pour in the chicken broth, then add the cream, Parmesan, garlic powder, and Italian seasoning. Stir and let simmer.
- Add the fettuccine to the pan and cook for 10-12 minutes, stirring often until the pasta is tender.
- Add the chopped spinach and stir until wilted, about 1-2 minutes.
- Taste and add salt and pepper as needed. Garnish with extra Parmesan and fresh basil.
