Creamy Garlic Steak Pasta

Ingredients
  

  • 1 lb sirloin or ribeye steak thinly sliced into strips
  • 12 oz fettuccine pasta
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic minced
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1 8 oz cream cheese cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • q.s. Salt & black pepper to taste
  • ½ cup reserved pasta water as needed
  • ¼ cup fresh parsley chopped for garnish

Equipment

  • Large pot for boiling pasta
  • Large skillet or deep frying pan non-stick or stainless steel
  • Tongs for tossing pasta
  • Sharp knife for slicing beef
  • Measuring cups and spoons

Method
 

  1. Bring a large pot of salted water to a rolling boil and cook the fettuccine until al dente.
  2. Reserve half a cup of pasta water, then drain the pasta and set aside.
  3. Season steak strips with salt, pepper, garlic powder, and onion powder, then heat olive oil in a skillet.
  4. Sear the beef in the skillet without moving for about 3-4 minutes or until browned, then remove and set aside.
  5. Add butter and minced garlic to the skillet and sauté for 30 seconds.
  6. Toss in the baby spinach and stir until it wilts down.
  7. Pour in the heavy cream, then add the cubed cream cheese and stir until melted and smooth.
  8. Mix in mozzarella and Parmesan cheese, adjusting thickness with reserved pasta water if needed.
  9. Return the beef to the skillet and add the cooked fettuccine, tossing to combine and coat.
  10. Serve immediately, garnished with parsley and extra Parmesan.
