Ingredients
  

  • 2 large chicken breasts, sliced into strips
  • 12 oz penne pasta
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp thyme
  • q.s. Salt and pepper, to taste
  • 1⅓ cups heavy cream
  • cup chicken broth
  • 3 oz Velveeta cheese, cubed
  • 2 oz cream cheese
  • ¾ cup shredded mozzarella
  • ¾ cup grated Parmesan
  • q.s. Chopped parsley, for garnish

  • Large skillet for cooking chicken and sauce

  • Meat thermometer for checking chicken’s temperature

Method
 

  1. Cook the penne in a large pot of salted boiling water until just al dente. Drain and set aside.
  2. Pat the chicken dry and season both sides with basil, oregano, thyme, salt, and pepper. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook for about 6-7 minutes, turning once, until golden and cooked through. Remove from the skillet and keep warm.
  3. In the same skillet, melt the remaining butter and add the minced garlic. Cook for about 30 seconds, stirring until fragrant. Pour in the chicken broth and cream, then bring to a gentle simmer. Add the cream cheese and Velveeta cubes, stirring until smooth and creamy. Gradually whisk in the mozzarella and Parmesan until the sauce becomes thick and glossy. Season to taste with salt and pepper.
  4. Add the cooked penne and toss gently until each piece is coated in the creamy Alfredo sauce. Let it cook on low for another minute so the pasta absorbs the flavor. Serve the pasta on one side and the chicken on the other, or layer the chicken over the top. Spoon extra sauce over everything and finish with a sprinkle of parsley and Parmesan.
