Ingredients
  

  • 12 oz pasta
  • 1 lb ground beef
  • 2 jalapeños, diced
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro (optional)

Method
 

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat a tablespoon of oil over medium heat. Cook the ground beef until browned, breaking it up as it cooks, for about 5-7 minutes. Drain excess fat.
  3. Add diced onions and minced garlic to the skillet and sauté until onions are translucent, about 2-3 minutes.
  4. Add the diced jalapeños, cumin, chili powder, salt, and black pepper to the skillet. Stir and cook for about 1 minute.
  5. Pour in the heavy cream and sour cream, stirring to combine, and let the sauce simmer for 3-4 minutes to thicken.
  6. Add the cooked pasta to the skillet and toss to coat with the sauce. Sprinkle shredded cheddar cheese over the top and stir until melted.
  7. Garnish with chopped fresh cilantro and serve hot.
