Ingredients

  • 3 cups dry elbow macaroni
  • 4 Tbsp salted butter
  • 2 cans evaporated milk (370 mL each)
  • 1/3 cup milk of choice
  • 2 large eggs
  • 1/4 tsp garlic salt
  • 4 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 tsp paprika

Equipment

  • Large pot
  • Colander
  • Bowls
  • Whisk
  • Spatula
  • 9x13 inch baking pan

Method

  1. Bring a large pot of water to a boil. Add salt and macaroni. Cook until al dente (8-10 minutes), then drain and return to pot.
  2. Add butter to the hot macaroni and stir until melted.
  3. In a large bowl, whisk together evaporated milk, regular milk, eggs, and garlic salt until combined.
  4. In another bowl, mix together shredded cheddar and mozzarella cheeses.
  5. Preheat oven to 375°F (190°C). Lightly spray a 9x13 inch baking pan. Layer one-third of mac, followed by one-third of cheese. Repeat two more times, ending with cheese on top. Pour milk mixture over the top and sprinkle with paprika.
  6. Bake for 25-30 minutes until golden and bubbly. Optionally, broil for 2-3 minutes for a crispy top.
  7. Let cool for a few minutes before serving. Scoop and enjoy!

Notes

Use fresh, high-quality cheese for better flavor and texture. Adjust seasoning according to personal preference if needed, adding more garlic salt or spices for depth. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for longer storage. A splash of milk when reheating can help maintain creamy texture.
