Ingredients
  

  • 8 oz Orecchiette or any short, sturdy pasta
  • 2 medium Yellow onions, sliced into 1/8-inch rings
  • 4 cloves Garlic, minced
  • 4 cups Water and beef bouillon to create beef broth
  • 1 cup Evaporated milk
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Reduced sodium soy sauce
  • 1 tsp Fresh thyme
  • 1 tsp Fresh parsley
  • 1 tsp Dried oregano
  • 1 tsp Paprika
  • 1 pinch Red pepper flakes
  • 1 cup Freshly shredded Gruyère cheese
  • 1/2 cup Grated Parmesan cheese

Method
 

  1. In a large Dutch oven, melt butter in olive oil over medium heat. Add sliced onions, salt, and pepper. Caramelize until golden brown, about 30-35 minutes.
  2. Add minced garlic, red pepper flakes, soy sauce, and Worcestershire sauce. Cook for 30 seconds while stirring constantly.
  3. Add water, half of the evaporated milk, cornstarch mixed with the remaining evaporated milk, beef bouillon, and seasonings. Bring to a boil.
  4. Add pasta, reduce heat to a simmer, and cook for 11-14 minutes, stirring often.
  5. Remove from heat and stir in Gruyère cheese until melted, then add Parmesan cheese. Adjust seasoning if needed.
