  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups diced potatoes (about 4-5 medium potatoes)
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp dried thyme
  • q.s. chopped fresh parsley for garnish to taste

Method
 

  1. In a large pot, cook the ground beef over medium heat until browned. Drain the excess fat, then add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  2. Stir in the diced potatoes, beef broth, salt, black pepper, paprika, and dried thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  3. In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, until the mixture is bubbly and golden. Slowly whisk in the milk until smooth and thickened.
  4. Stir the roux into the soup, mixing well. Add the heavy cream and shredded cheddar cheese, stirring until the cheese is melted and the soup is creamy.
  5. Taste the soup and adjust the seasoning with additional salt and pepper if needed.
  6. Ladle the soup into bowls and garnish with chopped fresh parsley.
