Ingredients
  

  • 400 g scallops
  • 200 ml crème fraîche
  • 100 ml white wine
  • 1 onion
  • 2 carrots
  • 1 bouquet garni (thyme and bay leaf)
  • 30 g butter
  • 2 tbsp olive oil
  • q.s. salt
  • q.s. pepper

Equipment

  • Large sauté pan
  • Knife and cutting board
  • Wooden spoon or spatula
  • Measuring cup

Method
 

  1. In a large pan, heat the olive oil and butter over medium heat.
  2. Add the finely chopped onion and sliced carrots. Sauté until soft and golden.
  3. Add the scallops to the pan and brown lightly on each side for about 3-4 minutes.
  4. Pour in the white wine to deglaze the pan and scrape up any browned bits. Let wine reduce for a few minutes.
  5. Stir in the crème fraîche and add the bouquet garni. Season with salt and pepper to taste.
  6. Reduce heat to low and let the mixture simmer for about 5-7 minutes, or until sauce slightly thickens.
  7. Remove the bouquet garni and serve hot.
