  • 3 cloves garlic minced
  • 8 oz mushrooms sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • q.s. salt and pepper to taste
  • q.s. red pepper flakes optional

Method
 

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil. Add the fettuccine and cook until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced mushrooms to the skillet and cook until golden brown, releasing their moisture.
  4. Toss in the spinach and let it wilt down, stirring gently to combine.
  5. Pour in the heavy cream and let it simmer for a few minutes. Stir in the Parmesan cheese, season with salt, pepper, and optional red pepper flakes.
  6. Add the cooked fettuccine to the skillet and toss to coat evenly in the creamy sauce. Adjust seasoning if needed and serve hot.
