  • 300 g beef mince or small meatball crumbles
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 10 oz fresh spinach
  • 16 oz tortellini (fresh or frozen)
  • to taste Salt and pepper

Method
 

  1. Start by bringing a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Add the beef mince or small meatball crumbles and cook, stirring occasionally, until browned and cooked through.
  4. Once the beef is cooked, add the fresh spinach to the skillet and stir until the spinach wilts.
  5. Pour in the heavy cream and bring the mixture to a simmer until the sauce thickens slightly.
  6. Add the cooked tortellini to the skillet with the beef and spinach mixture, tossing gently to combine.
  7. Sprinkle in the grated Parmesan cheese and stir until it melts, adding salt and pepper to taste.
  8. Transfer the Creamy Beef & Spinach Tortellini to serving bowls and garnish with fresh parsley. Serve immediately.
