Ingredients

  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup water
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed

Method
 

  1. Brown the ground beef in a large pot over medium heat until fully cooked and crumbly; drain excess fat.
  2. Add the diced onion and minced garlic; sauté for about 5 minutes until onions are translucent.
  3. Stir in the taco seasoning and diced tomatoes; add water and bring to a simmer for about 10 minutes.
  4. Pour in the heavy cream and stir until well combined; add the cheddar cheese and stir until melted and smooth.
  5. Add corn, black beans, salt, and pepper; let it simmer for another 5-10 minutes until thick and creamy.
