Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 large carrots, peeled and diced
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes optional
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups vegetable broth or chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • to taste Salt and black pepper
  • for garnish Fresh basil leaves

Method
 

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and carrots; cook until softened and the onion is translucent (about 5-7 minutes).
  3. Stir in the minced garlic, dried basil, dried oregano, and red pepper flakes; cook for an additional 1 minute.
  4. Pour in the crushed tomatoes, tomato sauce, and broth; stir well and bring to a simmer for 20 minutes.
  5. Use an immersion blender to puree the soup until smooth, then return it to the pot.
  6. Stir in the grated Parmesan cheese and heavy cream; continue to cook over low heat until the cheese is melted and the soup is heated through.
