Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 3 large eggs, at room temperature
  • 1 cup sliced fresh strawberries
  • 1 cup sliced ripe bananas
  • 1/2 cup whipped cream or whipped topping
  • as needed extra strawberries and bananas for garnish
  • as needed powdered sugar for a light dusting

Method
 

  1. Preheat your oven to 350°F (175°C) and line an 8x8 or 9x9 inch baking pan with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs and sugar, then mix with melted butter until it resembles wet sand.
  3. Press the mixture into the bottom of the prepared pan and refrigerate while making the filling.
  4. In a large bowl, beat the softened cream cheese until smooth, then add sugar and vanilla, mixing until silky.
  5. Add eggs one at a time, mixing on low speed until just combined.
  6. Gently fold in the sliced strawberries and bananas.
  7. Pour the filling over the crust and spread evenly. Bake for 35-40 minutes until edges are set and the center is slightly jiggly.
  8. Allow to cool completely on a wire rack, then cover and refrigerate for at least 3 hours, preferably overnight.
  9. Once chilled, lift the bars out of the pan using the parchment paper and slice into squares.
  10. Top each bar with a dollop of whipped cream, a slice of strawberry, and banana. Dust with powdered sugar before serving.
