Ingredients
  

  • 1 cup mashed sweet potatoes
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup honey
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 cup buttermilk
  • 1/4 cup honey for the butter
  • 1/2 cup softened butter for the butter

Equipment

  • Mixing bowls (one medium, one large)
  • Whisk
  • Spatula
  • Measuring cups and spoons
  • Baking pan (20x20 cm or similar)

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking pan.
  2. In a medium bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In a larger bowl, mix together mashed sweet potatoes, honey, eggs, melted butter, and buttermilk.
  4. Pour the dry ingredients into the wet mixture and stir gently until just combined.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 25-30 minutes until golden brown and a toothpick inserted in the center comes out clean.
  7. While the cornbread bakes, mix softened butter and honey in a small bowl to make the honey butter.
