Ingredients
  

  • 1/2 pound bacon
  • 3 extra-large russet potatoes peeled and chopped into 1/2"-3/4" pieces (about 6 cups)
  • 1 tsp kosher salt
  • 3/4 tsp freshly ground black pepper
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 3 green onions sliced thin

Method
 

  1. Spread bacon strips across a large rimmed baking sheet and cook in a cold oven at 400°F (200°C) for about 16-18 minutes until crispy.
  2. Transfer the bacon to a paper towel-lined plate, leaving 2-3 tablespoons of bacon grease on the baking sheet.
  3. Toss the chopped potatoes in the bacon grease on the same baking sheet, season with salt and pepper, and spread in a single layer.
  4. Bake the potatoes at 400°F (200°C) for 20 minutes, stir, then bake for another 20 minutes, and stir again before baking for an additional 15 minutes until crispy and golden.
  5. Chop the cooked bacon and sprinkle over the potatoes with the shredded cheese, then return to the oven for 2-3 minutes until the cheese is melted.
  6. Add sliced green onions on top before serving.
